CAJUN RED BEANS & RICE
Cook beans and bacon in salted water slowly for 45 minutes. Add vegetables, tomato sauce and seasonings. Cook slowly another hour, stirring occasionally. Add sausage for extra body and cook 45 minutes more. Let mixture cool somewhat. Reheat to a boil, then lower heat and simmer gently 30-45 minutes. Serve over boil rice. Full Article
